Molasses Oat Banana Muffins








Here is a tasty and well-rounded recipe to add to your breakfast or brunch rotation.  These muffins have it all - whole grains, fiber, fruit, and protein.  Delicious and nutritious.  The recipe makes 12 muffins.  So grab and go!


  • 1 cup all-purpose flour
  • ½ cup whole wheat flour
  • 1 cup old-fashioned oats
  • ¼ cup ground flaxseed
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp salt
  • ½ cup sugar
  • ¼ cup butter, softened
  • ¼ cup dark molasses
  • 2 eggs
  • 2 ripe bananas
  • ¼ cup nonfat plain greek yogurt
  • 1 tsp vanilla extract
  • Cooking spray
  1.  Preheat oven to 350 degrees.
  2. Combine flours, oats, flaxseed, baking soda, cinnamon, and salt in a medium bowl – mix well.
  3. Add sugar, butter, and molasses to a large bowl.  With either a stand mixer or a hand mixer, beat at medium speed until completely blended.  Add eggs, blend with mixer.  Add banana, yogurt, and vanilla – beat with mixer until completely blended.  Add flour mixture – beat at low speed with mixer until blended.
  4. Coat a 12-muffin cup baking tin with cooking spray.  Divide batter among the 12 muffin cups, filling each cup approximately ¾ full.  Bake at 350 degrees for 25 minutes.  Cool in pan on wire rack.  Makes 12 muffins.
